I've used both, and now I'm supposed to be using the nitrile gloves when cleaning the big printer at work. The ink can eventually cause an allergic reaction, but only about half the time to I take the time to get the gloves out. As Nigel said, latex will dissolve in solvents. The nitrile is a bit bulkier, as in thicker, but we are talking fractions of an inch here, they can be had in many places including Wal Mart, Lowe's, Home Depot, etc. They are disposable, and need to be tossed after use. If you have small hands, as my helper does, she can use her gloves more than once, I have fat hands and the gloves are a pain to get off then back on. Your actual mileage may vary.

I'd recommend using the nitrile, the cost is not that different. I don't have any experience with using them in modeling, but I never work well in gloves, regardless.
