Hi, Brent.
I have noticed the differences in the M-2 steam chests. I have no idea as to why they were changed or designed differently. I don't recall much being said about them or the M-2 in general.
I have several other steam chests that may work or be closer to so I'll explore that possibility with my reconstruction.
I really think the M-2 is an awesome looking beast and so that's why I can't resist them and have the 4 engines now. Since this one is a basket case it seemed a logical thought to make some big changes in it like the VG, pilot and the centered headlight. Possibly remove the BL FW heater too even though it's one of the M-2 features I really like.
I don't think the VG change will be too difficult. I bought a few different sets from Greenway and they are complete.
I'll try to remember to take pictures as I go along and share them with everyone.

The only drawback I see to your plan to change the valve gear on the M2 is that Sunset chose to model that unusual value chest (an attempt at compound value operations - if memory loss hasn't addled me too much) and I don't recall seeing that ever paired with walchaerts gear in prototype photos. 
Personally, I don't have the skills in my toolbox to even consider changing the valve gear on a brass locomotive, so I am envious of your abilities.

Thanks for the information on the LMB model. I wasn't aware they were undersized only they were sort of substandard by todays' brass castings. When I get to the LMB I was planning on updating her with better details anyway. 
Right now I'm trying to work out a basket case Sunset M-2 I bought. Pretty trashed but most everything is there. No tender but I have a large variety of tenders to add to her. I'm thinking of changing out the Baker VG for a set of Walschaerts I have just for variety. I have 2 other stock Sunset M-2s and will leave them as-is. My PSC M-2 just needs a new home. I like the Sunsets better.
